As a low carb eater here in Austin, TX, I find that it’s difficult to find places that serve up diet friendly desserts. I sometimes miss sweet treats like ice cream, brownies, and pecan pie! While I can buy pre-packaged or dessert mix items in a low carb or keto variety at my local grocery store, they are definitely pricey and often times, just not that great. So, I’ve set out to learn to make some of these snacks at home with ingredients that are staple items in my pantry anyway.

I started simple and came up with an easy whipped topping recipe to dip berries like strawberries, raspberries, and blackberries in, to add just a bit of sweetness to the sometimes tart fruits. All you need to make this whipped topping is:

1 Cup Heavy Whipping Cream

1 Tablespoon Powdered Erythritol

1 Teaspoon Vanilla

Simply combine these ingredients in a mixer (or a bowl) and blend until fluffy peaks form. On high, this took about 3 minutes in my stand mixer, but it will take longer if you are using a hand mixer or simply whisking yourself. Yes, it’s really that easy! You can also add coco powder to make a chocolate version if you prefer.

This is a quick recipe that you can whip up in no time to enjoy if you’re really missing something sweet. Combined with berries, on top of keto friendly pies, or wedged between two low-carb cookies, this topping is honestly so delicious and versatile. Keep an eye out for upcoming recipes I use this in conjunction with (like low carb fruit salad, my delicious low carb piña colada, and so much more to come).

Let me know in the comments how you will use this recipe. If you make some changes, add some ingredients, or find additional ways to incorporate this into other delectable desserts, please let me know so I can try them, too! Happy eating!
